Meyer lemon gin & tonic

2 oz Gin (preferably a floral gin like Nolet’s)

3 - 4 oz tonic water

1 wedge Meyer Lemon squeezed (reserve peel without white pith)

1 spring fresh rosemary (in season now)

1 spring lemon thyme

~ Add ice to highball glass along with herbs. Squeeze in Meyer lemon wedge, add gin, tonic and stir to season the cocktail. Finally top with tonic, Meyer lemon wedge & lemon peel as garnish.
